Soy Sauce Roasted Christmas Turkey Recipe

The Soy Sauce Roasted Turkey adds an Asian twist to Christmas .

 

Soy sauce is made from fermented soybeans.  It is widely used in Asian cooking, where it is used as a marinade and a condiment.  It works wonderfully with turkey, adding a well-rounded salty yet slightly sweet umami flavor.

 

The addition of sesame oil adds a rich, warm nuttiness that keeps you coming back for more.

 

Ingredients:

whole turkey

Soy Sauce Marinade(The marinade is made from mixture of soy sauce, sesame oil, brown sugar, ginger, and garlic)

4 fresh bay leaves (more can be prepared for garnish)

12 sprigs of fresh baby thyme (to separate them)

4 small Onions (each cut into quarters and separated)

2 tablespoons sesame oil

2 large carrots (cut into 2-inch cubes)

2 celery sticks (cut into 2-inch cubes)

 

Steps:

1.Heat the oven to 190°C.

2Remove the innards and neck, leaving the neck intact. Pat the Turkey dry with paper towels and stuff in the garlic, bay leaves, 8 sprigs of thyme and half the onion.

3.Tie the legs together with cooking twine and tuck the tips of the wings under the body (to keep them from burning in the oven). Grease the surface of the Turkey with sesame oil

4.Place Turkey neck, carrot, celery and remaining onion & thyme in large roasting pan. Place Turkey on top.

5.Begin roasting the Turkey until a thermometer inserted into the thickest part of the thigh reads 75°C, about 2 to 3 hours. (Cover the Turkey loosely with foil if it turns golden too quickly while roasting; If the vegetables start to burn, add the prepared chicken stock to the pan.)

6.Remove the Turkey, tilt it carefully and pour the soy sauce Marinade  into the pan. Transfer the Turkey to a cutting board, cover loosely with foil and let sit for 25 minutes.

7.Arrange the rest of the ingredients, set the Turkey and serve with a fragrant stock.
